In celebration of its 10-year anniversary, KIBOU Japanese Kitchen and Bar is launching a ‘Best of 10’ specials menu this August, featuring some of the restaurant’s most loved dishes from over the last decade, as voted for by their guests.

Yaki Soba, Anko Roll, Ebi Stak

From its humble beginnings as a small basement restaurant with seating for just 24 guests, to its current 120-cover restaurant on Regent Street, KIBOU in Cheltenham remains the town’s most popular and most awarded Japanese restaurant. Attracting a diverse crowd of Japanese food and drink lovers from Gloucestershire and beyond, the restaurant has a loyal customer base and core team members that have been with them from the very start, along with a steady flow of new KIBOU devotees.

To mark this milestone anniversary, in June KIBOU invited fans of the restaurant to let them know what they’d like to see on a specials menu that will run throughout August, its official birthday month.

The ‘Best of 10’ menu includes a mix of old favourites that are no longer on the current menu, along with a number of specials that the restaurant has served over the years. They received over 100 responses from guests, with a number of clear winners that are now destined to take centre stage on the menu, namely the Ebi Stak (KIBOU’s signature version of prawn toast), which received over 25% of the votes. Due to escalating food prices, the restaurant had to make the tough decision to remove this dish from the menu earlier in the year, but guests will be delighted to see it return for the month of August.

Commenting on the ‘Best of 10’ menu, Ian Pechon, Senior Head Sushi Chef at KIBOU Cheltenham, and one of the original kitchen team members at the restaurant says;

“This was such a fun menu to pull together, and felt like a little trip down memory lane, especially with all the great input we had from our guests. We knew the Ebi Stak would be a firm favourite, but what I really enjoyed the most was seeing how many of our other dishes that guests had remembered over the years. These include our soft-shell crab tempura, yaki soba, and our delicious anko roll (monkfish uramaki). The menu is going to be available throughout August, and we look forward to welcoming guests, old and new, to enjoy it.”
