This December, authentic Sri Lankan restaurant group The Coconut Tree is sharing its Sri Lankan style split sprouts & cashews recipe to celebrate the launch of its 2022 Christmas menu.

The Coconut Tree’s much-loved Ho-Ho-Hoppers feature on the menu for another year, along with Sri Lankan style split sprouts and cashews - fresh sprouts, pan-fried with cashews, onion, garlic & chipper (TCT chilli mix), and turkey baubles - crispy fried balls filled with quality British minced turkey, big island flavours and a pot of cranberry sauce. Customers can even enjoy a nice slice of Christmas cake and vanilla ice cream for dessert.  

The Christmas menu also includes a number of set party meal offers encouraging customers to try a Coconut Tree Christmas with a festive lunch or night out with family, friends or colleagues this year. 

Customers can try cooking Sri Lankan style split sprouts & cashews for themselves at home this Christmas as part of The Coconut Tree’s mission to bring Sri Lankan eats to communities across the world.  

Sri Lankan style split sprouts & cashews – Serves 4 

Ingredients

250g Brussel sprouts, washed and halved   

2 tablespoons coconut oil  

50g raw cashew nuts 

Pinch of salt  

2 teaspoons crushed chillies  

1/2 teaspoon sugar  

½ red onion, thinly sliced  

A few fresh or dried curry leaves 

Directions

1. Gently heat 1 tablespoon of coconut oil in a large, heavy-based pan. Once the oil has melted, add the sliced onion, curry leaves, sugar, and salt.  

2. Cook for a few minutes until the onions start to caramelise.  

3. In a separate pan, gently heat 1 tablespoon of coconut oil and add the sprouts and cashew nuts. Cook until they start to brown.  

4. Combine the two mixes together and serve. 

For those celebrating New Year with the Coconut Tree –you'll get a free bottle of Prosecco (for a table of 6 or more) if in the restaurant at midnight. Or a glass of prosecco per person for tables of less than 6.
